そういえば、先日レストランででしたが、はじめてAisy-cendrés（エジーサンドレ）というエポワスの仲間のチーズを食べました（オレンジ色のミモレットの右側）。若いエポワスを1カ月ほど灰かぶりの状態で熟成させたものだそうで、エポワスよりも少しマイルドな味わい。とっても好きな味でした！
